The seasons are changing in Montreal and we are getting closer and closer to winter. The grocery stores are beginning to stock their shelves with Christmas ingredients. We can find fruit cakes, Italian panettone, chocolate in all shapes and forms, dried fruit and nuts. You can see barrels and barrels of different kind of nuts. One of the more popular nuts that is very easy to bake with is the walnut. Walnuts are filled with so many wonderful nutrients. They are considered brain food. They keep your brain young! I love baking with walnuts. They add so much flavor to my sweet treats. They also pair exceptionally well with wine, fruit and cheese. I always have a package of walnuts in my pantry.

This week’s recipe is for walnut pie. It is such a Canadian dessert as it is made with maple syrup too! I hope you give this recipe a try and take short cuts as I do by purchasing store bought pie dough. I prefer Pillsbury pie crust, but you can find Tenderflake in the frozen food aisle at the grocery store. The package comes with two pie shells, so you can keep one frozen and whip up a dessert in no time.

For my version of Walnut Pie, you will need the following ingredients:
– One pie shell
– 2 cups of chopped walnuts
– 2 eggs
– 1 cup of maple syrup
– 1 teaspoon of vanilla
– 2 Tablespoons of melted salted butter
– 2 Tablespoons of flour
– ½ teaspoon of cinnamon

Preheat your oven to 350 degrees. In a mixing bowl, combine the butter, eggs, vanilla, flour and cinnamon. Place the chopped walnuts in the pie shell. Pour the liquid mixture over the walnuts. Bake at 350 degrees for approximately 40 minutes. The pie will puff up because of the eggs but will deflate after cooling. This is normal.
I like to serve the pie with a dollop of whipped cream and a sprinkle of dried fruits.
