Recipe of the Week!

It’s a new year and I am so excited to share a new batch of recipes with all of you!  The city of Montreal is all about food!  It is a big part of our culture and identity.  That is why we wanted our plus programme to be gastronomy!  We want to give all our EC Montreal students a taste of Montreal and introduce them to all the local flavours and savours!

The month of January has always been devoted to helping our students fulfil their new year’s resolutions.  One of the most colourful activities we introduced our students to was our healthy lunch day.  We would create a salad bar in the student lounge.  The bar would be filled with different kinds of lettuce, vegetables and the most wonderful toppings like tuna, corn, croutons, olives, cottage cheese and dressings.

So, in honour of our annual healthy lunch day activities at EC Montreal, I would like to share my favourite salad recipe with all of you!  It is the Cobb Salad.

For my version of a Cobb Salad, you will need the following ingredients:

  • 1 head of romaine lettuce
  • 8 cherry tomatoes, halved
  • 1 cucumber sliced
  • 3 hard boiled eggs
  • 4 bacon strips, sliced
  • 4 slices of blue cheese
  • 1 grilled chicken breast, sliced
  • 1 avocado, sliced
  • ranch dressing

You don’t need to make everything from scratch.  I like to buy packages of pre-cooked bacon and pre-cooked chicken breast so it is ready to use for a quick lunch or supper.  The fat content of this salad is pretty high, however, it is packed with so many wonderful super foods like avocados, eggs and vegetables.  It is a delicious salad and very filling!

If you are not a fan of blue cheese, you can replace it with your favourite cheese.  If you are looking for a low-fat option, cottage cheese or light mozzarella can be a nice option.
