It is maple season in the province of Quebec so for the entire month of March, we will be sharing our favourite maple recipes. Every March at EC Montreal, the social calendar is filled with maple and sugar shack activities to celebrate one of Quebec’s most local products. The events would include maple festivals, maple tea and conversation, pancake breakfast and a visit to a local “Cabane a Sucre” maple farm.
During our maple festival, we make sure to display information on every table in the student lounge with fun and interesting facts about maple syrup.

We are delighted to share another wonderful and easy maple recipe for you to try. This one is for a simple maple pie. You can buy your pie shells from the frozen food section of the grocery store for this recipe.
You will need the following ingredients:
• 1 cup maple syrup
• 1 cup brown sugar
• 1/3 cup melted butter
• 2/3 cup whipping cream
• 2 tsp vanilla extract
• 1 1/2 tbsp flour
• 3 eggs
In a small saucepan, combine the maple syrup, brown sugar and butter. Bring to a boil over medium low heat for 5 minutes.
Remove from heat and stir in the whipping cream and vanilla extract. Allow to cool to room temperature for about an hour.
Preheat oven to 375 degrees F. When the boiled mixture is cool, whisk in the eggs and 1 1/2 tbsp flour into the filling until smooth and pour into the pie shell. Bake at 375 degrees for 15 minutes, then reduce the heat to 350 degrees and bake for an additional 35-45 minutes until the top is golden brown. Cool to room temperature before refrigerating until serving. Great served with a dollop of whipped cream or a scoop of vanilla ice cream.
