Today is November 1 and the month of November at EC Montreal has always been called “Soulful November”. It is one of the most uneventful months of the year, sandwiched between all the excitement of October’s Halloween festivities and December’s Christmas activities!

We dedicated the entire month of November to events that feed the mind, body and soul. Some of our popular November activities included a soul lounge where we would play jazz music and serve chocolate martinis. We would have a yoga and meditation lesson to feed our mind, body and soul all at the same time and our taste of Montreal event was serving Canada’s number one comfort food; grilled cheese sandwiches.

So, in honour of EC Montreal’s Soulful November themed month, I am happy to share with you my recipe for a gourmet grilled cheese sandwich. These ingredients will make approximately 4 sandwiches.

For my version of grilled cheese, you will need the following ingredients:
– One loaf of crusty bread
– 3 tablespoons of garlic butter
– Salted butter to spread on the bread
– 4 slices of brie cheese
– 4 slices of smoked Gouda
– 4 slices of sharp cheddar cheese
– A bunch of arugula lettuce leaves

Place the garlic butter in a flat griddle or frying pan. Spread butter on both sides of the bread slices. Add one slice of each cheese to the bread and place a generous bunch of arugula over top. Place the top of the bread and put the sandwich on the hot griddle. Press the sandwich down with a spatula. When the bottom is browned, flip it over and grill the other side. Keep pressing the sandwich down until you can see the melted cheese oozing out of the sandwich.

Remove the sandwiches from the griddle and place them on a cutting board. Cut the sandwiches in four, triangle pieces. Serve the sandwich on the side of a bowl of tomato soup to get the full comfort food effect!

We hope you will give this very easy recipe a try. You can get creative with the cheese you use. I tried many different kinds until I settled on this incredible combination.
